‘the snail trail’ discover the world of ‘héliciculture’ in burgundy

Day 1 – Sunday afternoon arrival
Arrive at, ‘La Ferme de la Lochere,’ by transfer from the local station provided by us, and enjoy the local Burgundian aperitif.
There will be plenty of time to explore the village and meander along the canal before
Katherine demonstrates the Gougère traditionally eaten whilst wine tasting which fits in perfectly as our wine expert Brendan Moore www.wine-liaisons.com will be explaining the appellations of Burgundy’s famous wines and you will be enjoy a selection of delicious chardonnay’s and pinot noir’s from all over this intriguing region.
Dinner will be cooked and served by your hostess whilst the snail trail and culinary extravaganza are discussed.


  Day 2 – Monday
After a leisurely breakfast you will be heading off to our most local snail farm where this small holding raises snails in the traditional way, but who also has a micro laboratory where all the preparations are carried out in order to sell snail products.
Lunch will be back at ‘la lochere’ followed by a short trip to enjoy the wines of our local vineyard Flavigny where the film ‘Chocolat’ was made.
You will then be free to stroll through the village and admire the medieval architecture, pop into the quaint sweet shop where the ‘anis de Flavigny’ are produced
A demonstration by Katherine will preceed dinner cooked by the team


Day 3- Tuesday
Today you will be heading off to Dijon and the colourful Market that is held 3 times a week.
Armed with your recipe book and a list of ingredients to seek out, testing your French!
When your baskets are full a well earned café au lait awaits you before heading back via the ducal palace of the Dukes of Burgundy.
A rustic lunch will be enjoyed from the market out in the courtyard, and then you will participate with a hands on experience in the preparation of snails that we have collected on our early morning foraging.
You will learn all the stages of their preparation first hand and will truly appreciate the skill of the artisans.
Dinner will be the fruits of our afternoon preparations


  Day 4 – Wednesday
This morning after breakfast, Brendan our wine expert will whisk you off to the South of Burgundy towards Chassagne Montrachet where your taste buds will be brought to life and you’ll learn new techniques to appreciate wine.
You will indulge in a local Bistro lunch before heading to another snail farm near Chalon sur Saone, bigger than our first producer, but still rearing snails in the traditional way.Dinner will be at ‘la ferme de la lochere’


Day 5 – Thursday
Today is a very early start so after a delicious breakfast you will be leaving and heading up to Reims to visit a more industrial environment where hundreds of thousands of snails are raised and prepared. The tour involves learning how the industrial process happens from rearing to restaurants.
Dinner will be prepared by your hostess at ‘la ferme de la lochere’


 cloisters-abbaye-de-fontenay Day 6 – Friday
After breakfast this morning we shall be preparing a light lunch together and then you will depart with one of our regular  guides to the Abbaye de Fontenay www.abbayedefontenay.com one of the oldest Cistercian Monasteries in Europe founded in 1118 by St. Bernard and now a Unesco treasure.
On the return trip you will stop off at  ‘Alexandre’ Chocolatier in the medieval town of Semur en Auxois for a private chocolate tasting where Alexandre will share the secrets of fine chocolate.
You will then be free to take bikes out along the Canal de Bourgogne, stroll through the countryside, explore the local Chateau or just relax by the pool.
Our farewell supper will be the penultimate feast, a degustation menu at 3* michelin restaurant Bernard Loiseau in Saulieu www.bernard-loiseau.com

Day 7 – Saturday
Alas, all Sood things must come to an end and after breakfast we will be offering transfers to the train station in Montbard where you will be taken to Paris in time for lunch, and your new appreciation for all things French can be truly indulged!
